Ingredients:
Hot Honey
· 1 cup honey
· 2 tbs red pepper flakes
· 1 ½ tsp apple cider vinegar
Apricots
· 8 ripe apricots
· 2 tbs hot honey, plus more for drizzling
· Juice of 1 orange
· 1, 8oz log of goat cheese
· John Wm. Macy’s Grilled Crostini Toasts
· Fresh mint, for garnishing
Instructions:
Hot Honey
1. In a small saucepan over medium heat, combine honey and red pepper flakes.
2. Once the edges begin to boil, remove the pan from heat and stir in the apple cider vinegar.
3. Strain the pepper flakes out, and pour honey into a jar. Set aside to cool.
Apricots
1. Preheat oven to 350°F.
2. Slice your apricots into halves and discard the pits. Place in a 9x9 baking dish, with the centers of the fruit facing up.
3. Drizzle the orange juice and honey over the apricots in the pan, coating evenly.
4. Bake for 25-30 minutes, or until the apricots are softened and beginning to caramelize. Remove from the oven and set aside to cool.
5. Spread a thin layer of goat cheese on each crostini toast, and place one of your apricot halves on top. Lightly drizzle with some more hot honey, and garnish with fresh mint leaves. Serve warm or at room temperature, and enjoy!
